Pumpkin Pie Pop-tarts Cheesecake

This is an easy cheesecake recipe using Pumpkin Pie Pop-tarts as the crust and sprinkle topping. It was a big hit at our fall get-together last weekend.

4 Pumpkin Pie Pop-tarts turned into crumbs in the food processor, 1/4 c. reserved for sprinkles
1 cup of sour cream
8 ounces of cream cheese
1/3 cup of sugar
1 tub of whipped topping
2 Tablespoons of butter or Margarine

Cream together sour cream, cream cheese and sugar. Then add 1 tub of Cool Whip. Beat until smooth.

Mix Pop-tarts crumbs with butter and press into 9×13″ pie shell. Pour cream mixture on top of crust. Sprinkle remaining crumbs on top of cream filling. Refrigerate until ready to serve.
