Gingerbread Pancakes

This would be a great breakfast idea for Christmas morning. Using Gingerbread Pop-Tarts, I made gingerbread pancakes.

I used this basic pancake recipe.

2 cups all-purpose flour

2 1/2 teaspoons baking powder

3 tablespoons granulated sugar

1/2 teaspoon salt

2 large eggs

1 1/2 to 1 3/4 cups milk

2 tablespoons melted butter

Crush up two Gingerbread Pop-Tarts and add them to the mix.

Cook and serve with your favorite topping.
